Pea Soup with Chicken Breast

Ingredients for 4 people

  • 2 chicken breasts
  • 2 l water
  • 1 onion, chopped
  • 1 T-spoon salt
  • ½ leek (the white part), cut into rings
  • Rice
  • Curry powder
  • 2 dessert spoons double cream
  • 100 g frozen peas
  • Chopped parsley

Preparation

Put the chicken breasts, chopped onion, salt and chopped leek in a pan with the water, bring to the boil and then simmer for about 30 minutes. Sieve, keeping the stock. Chop the chicken breasts into strips and return to the stock.

Cook the rice in lightly salted water and add to the soup. Add the peas and simmer for 5 minutes.

Season the soup with curry powder and cream. Sprinkle with chopped parsley and serve with baguette.
